2 medium sweet potatoes
1/3 to 1/2 cup green onions/scallions, chopped
1 to 2 tablespoons of olive oil
1.5 to 2 tablespoons of yogurt (Greek yogurt gives a creamier texture)
pinch of salt
1. Preheat oven to 350F.
2. Cut sweet potatoes into ¼ inch slices. Massage sweet potatoes with olive oil.
3. Place sweet potatoes on a sheet with parchment or wax paper. Bake at 350F for 25 minutes or until tender with fork.
4. While potatoes are baking, mix well the yogurt, salt, and chopped scallions.
5. When sweet potatoes are ready, top them with a dollop of scallion cream and enjoy.
