Shrimp, Potato and Egg Salad: Ultimate Leftovers

Ingredients

  • 1 egg, hard boiled & sliced
  • 1 small tomato, sliced
  • 1/2 leftover potato, sliced
  • 4-7 leftover green beans
  • 1/2 avocado, halved
  • 5-6 pieces shrimp, cooked
  • Top with capers
  • Add mixed greens
  • Optional: Oil, Lemon, Salt and Pepper

Directions

Mix ingredients together, top with favorite dressing or just oil and a squeeze of fresh lemon, salt and pepper to taste
