
Shrimp, Potato and Egg Salad: Ultimate Leftovers
Ingredients
- 1 egg, hard boiled & sliced
- 1 small tomato, sliced
- 1/2 leftover potato, sliced
- 4-7 leftover green beans
- 1/2 avocado, halved
- 5-6 pieces shrimp, cooked
- Top with capers
- Add mixed greens
- Optional: Oil, Lemon, Salt and Pepper
Directions
Mix ingredients together, top with favorite dressing or just oil and a squeeze of fresh lemon, salt and pepper to taste
