Carrots

The carrot is a hearty, cool-season root vegetable. Carrots have a crisp texture and are extremely high in beta-carotene, a substance converted into vitamin A by the human body, which may prevent lung cancer, stroke, and heart disease. Beta-carotene also gives orange carrots their bright orange color.
